Pasta Salad!"},"content":{"rendered":"<p style=\"text-align: center;\"><a rel=\"attachment wp-att-873\" href=\"http:\/\/amyalphin.com\/?attachment_id=873\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-873\" title=\"IMG_0289\" src=\"http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/08\/IMG_0289.jpg\" alt=\"\" width=\"518\" height=\"357\" \/><\/a><\/p>\n<p>So it&#8217;s been like a gazillion degrees around here for the past few days.\u00a0 Now, I know that I&#8217;m from the south, and all of you VA readers are probably laughing at my weak sauce, west coast, can&#8217;t handle the heat, wimpiness, but y&#8217;all have AC so you can shut it.\u00a0 For the past few days, it&#8217;s been around 90 degrees.\u00a0 IN OUR HOUSE.\u00a0 Right.\u00a0 So I decided I would no longer cook.\u00a0 Too hot, too much stuff, and again, too hot.\u00a0 But&#8230;then I got hungry.\u00a0 And so did Tom.\u00a0 So it seemed that I needed to provide food for us after all, since we&#8217;re <em>trying<\/em>\u00a0 to be healthier, and really, eating cheese balls out of the can does NOT count as a meal.\u00a0 Or so I&#8217;m told.<\/p>\n<p style=\"text-align: center;\"><a rel=\"attachment wp-att-874\" href=\"http:\/\/amyalphin.com\/?attachment_id=874\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-874 aligncenter\" title=\"IMG_0292\" src=\"http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/08\/IMG_0292.jpg\" alt=\"\" width=\"517\" height=\"330\" \/><\/a><\/p>\n<p>So I made pasta salad.\u00a0 The only cooking involved was the 8minutes it took to boil the pasta.\u00a0 Sweet.\u00a0 I adaped\u00a0<a href=\"http:\/\/thepioneerwoman.com\/tasty-kitchen\/recipes\/salads\/acini-di-pepe-savory-pasta-salad\/\">this recipe <\/a>from the<a href=\"http:\/\/thepioneerwoman.com\/tasty-kitchen\/\"> Tasty Kitchen <\/a>by adding a carrot form our garden and an extra green pepper, and also left out the tomatoes&#8230;cause I dont&#8217; like them.\u00a0 It resulted in a wonderful, cool meal we could eat on our porch.\u00a0 Win.\u00a0 Plus, look how pretty!<\/p>\n<p style=\"text-align: center;\"><a rel=\"attachment wp-att-875\" href=\"http:\/\/amyalphin.com\/?attachment_id=875\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-875  aligncenter\" title=\"IMG_0293\" src=\"http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/08\/IMG_0293.jpg\" alt=\"\" width=\"604\" height=\"427\" \/><\/a><\/p>\n<p>Recipe (please disregard the fact that there is a zucchini in the ingredients photo, I didn&#8217;t end up using it):<\/p>\n<p>1 box Acini di Pepe pasta, cooked and cooled<\/p>\n<p>1 green pepper, chopped<\/p>\n<p>1 orange pepper, chopped<\/p>\n<p>1\/2 red onion, diced<\/p>\n<p>1 carrot, chopped<\/p>\n<p>about a 1\/4 cup of mixed olive oil and\u00a0balsamic vinegar &#8211; (to this I also added about 1\/2 tsp of oregano, garlic powder and a pinch of black pepper)<\/p>\n<p>Mix it all together and allow to cool in the fridge for about an hour.\u00a0<\/p>\n<p>Add grated parmesan to the top if you like that kind of thing.\u00a0 I know I do.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So it&#8217;s been like a gazillion degrees around here for the past few days.\u00a0 Now, I know that I&#8217;m from the south, and all of&#8230;<\/p>\n<div class=\"more-link-wrapper\"><a class=\"more-link\" href=\"http:\/\/amyalphin.com\/?p=872\">Continue reading<span class=\"screen-reader-text\">What&#8217;s Cookin?
