We must embrace winter in all of it&#8217;s wet glory, and adapt the best that we can.\u00a0 My version of adapting often involves food, specifically carbohydrates. That is why this post is not about the lemon curd I was supposed to make.\u00a0 No, tonight we needed some comfort food, and it came in the form of spaghetti and meatballs.\u00a0 I found a wonderful recipe over at <a href=\"http:\/\/thepioneerwoman.com\/cooking\/2010\/02\/spaghetti-meatballs\/\">The Pioneer Woman<\/a>, and decided to give it a try since I had never made meatballs before.<\/p>\n<p style=\"text-align: center;\"><a rel=\"attachment wp-att-169\" href=\"http:\/\/amyalphin.com\/?attachment_id=169\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-169\" title=\"IMG_8864\" src=\"http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/02\/IMG_8864-300x199.jpg\" alt=\"\" width=\"300\" height=\"199\" srcset=\"http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/02\/IMG_8864-300x199.jpg 300w, http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/02\/IMG_8864-600x399.jpg 600w, http:\/\/amyalphin.com\/wp-content\/uploads\/2010\/02\/IMG_8864.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The tricky part was browning the meatballs in the pan without having them break apart, thereby turning your meatballs into meatbits.\u00a0 Since you brown them just a few at a time, the first ones were pretty much a fail, but they got progressively more ball-like as the process went on.
